Things to Do on the OBX for January 10th 2025
Today, the Outer Banks will experience cold temperatures with a mix of sun and clouds. The high is expected to be around 36°F (2°C), with a low near 32°F (0°C). A Winter Weather Advisory is in effect until 3:00 AM EST on Saturday, forecasting mixed precipitation, including snow and ice accumulations. Roads, especially bridges and overpasses, may become slick and hazardous. Caution is advised for those traveling in the area.
The Atlantic Ocean's water temperature is approximately 49°F (9°C), which is quite cold for swimming but suitable for beach walks and shoreline activities.
National Oysters Rockefeller Day
Today, we celebrate National Oysters Rockefeller Day, honoring the classic American dish that originated in the late 19th century. Created by Jules Alciatore at Antoine's Restaurant in New Orleans, the dish was named "Rockefeller" due to its rich, buttery sauce, symbolizing the wealth of John D. Rockefeller.
OBX Oysters Rockefeller Recipe
Experience a coastal twist on this classic dish with fresh Outer Banks oysters.
Ingredients:
12 fresh Outer Banks oysters, shucked
2 tablespoons unsalted butter
1/4 cup finely chopped shallots
1 clove garlic, minced
2 cups fresh spinach, chopped
1/4 cup Pernod or anise-flavored liqueur (optional)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs
Salt and freshly ground black pepper, to taste
Lemon wedges, for serving
Instructions:
Preheat your oven to 450°F (232°C).
In a skillet over medium heat, melt the butter. Add shallots and garlic; sauté until translucent.
Stir in the chopped spinach and cook until wilted.
If using, add Pernod and cook for an additional 2 minutes to reduce slightly.
Pour in the heavy cream and simmer until the mixture thickens. Season with salt and pepper to taste.
Arrange the shucked oysters on a baking sheet. Spoon the spinach mixture over each oyster.
In a small bowl, combine Parmesan cheese and breadcrumbs. Sprinkle this mixture over the oysters.
Bake for 10-12 minutes, or until the topping is golden and the oysters are cooked through.
Serve hot with lemon wedges on the side.
